Forged in Thiers, France by a 5th-generation bladesmith, the blade combines the durability of German steel with the razor-sharp precision of Japanese knives. It features an asymmetric double bevel with a 14° primary micro bevel on the front and a 4° polishing bevel on the reverse—resulting in a total cutting angle of just 18°. This is part of our Asymmetrical Bevel Technology (ABT), which delivers ultra-smooth cuts, longer edge retention, and effortless slicing power.
Unlike standard knives that dull unevenly, ABT keeps this blade sharper for longer, requiring just a few strokes of a honing rod on the reverse side for maintenance. And even though the blade is asymmetrical, it's been carefully designed to feel intuitive for both right- and left-handed chefs.
