What’s the best way to care for the Tom Colicchio Pan?

We recommend the same care guidelines for the Tom Colicchio Pan as we do for each piece in our Carbon Steel Collection. For your first cook out of the box, we suggest cooking bacon, steak, or another fatty ingredient to kick start the buildup of a smooth, naturally non stick surface. To clean, wait for the pan to completely cool before removing excess grease or debris with a paper towel or rag. Stubborn food remnants can be removed by adding enough water to cover the debris, boiling the water, then gently scraping it off with a wooden spoon. What’s the difference between the Tom Colicchio Carbon Steel Pan and our standard Carbon Steel Frying Pan?

The Tom Colicchio Carbon Steel Pan is a limited-edition product that features exclusive design elements not included on our standard Carbon Steel Frying Pans. These include a thicker gauge of preseasoned carbon steel (to emulate years of use), a 100% brass handle featuring Chef Colicchio’s signature, and an extended handle length to ensure it’s always within reach.

Does the brass handle get hot?

Since the handle is 100% brass and is not the same construction as our Stay-Cool Handle, it heats up when used over a heat source or in the oven. To keep hands safe, use a dish towel, oven mitt, or the included chef towel when maneuvering the pan around the stove or in and out of the oven.
